If you’re not familiar with pho, it’s a Vietnamese soup-type noodle dish. This recipe is a basic chicken pho for beginners. It makes a great fast weeknight dinner.

The quality of the broth is key to the flavor. I used homemade chicken broth that I’d made the day before and used the leftover cut-up chicken breast–it takes a lot longer if you cook it from scratch.

You can get fancier with the spices and garnishes.  Star anise and cloves are often included, and some recipes require toasting the spices first. Some people like to serve it with sriracha sauce.

Instructions
  1. In a large saucepan, combine the chicken broth/stock, chopped cooked chicken breast, coriander, green onions, ginger, fish sauce and bring to a boil. Turn heat down and simmer for about 10 minutes.
  2. Meanwhile, in another pot, bring the noodles to a boil and cook until soft (about 6 minutes). Drain and set aside.
  3. Add the noodles to four serving bowls and pour the chicken mixture over them. Top with cilantro and other garnishes.
