Cultured Coconut and Blueberry Smoothie Bowl: A simple refreshing smoothie bowl packed with antioxidants, probiotics, blueberries and coconut. Vegan and Gluten Free.
After all the heavy food and sweet treats I consumed over the holidays, I’m ready for something lighter like this Cultured Coconut and Blueberry Smoothie Bowl. I actually didn’t eat anything really unhealthy–just more than I normally eat.
This smoothie bowl is made with homemade coconut yogurt, but you could substitute a store bought one. But stay away from those with added sugar. Most yogurt you buy at the store is not a health food. In addition to having lots of sugar, they also can have lots of chemicals.
I make make own yogurt and kefir, which is really easy to make and works out to be cheaper than store bought–and much healthier too as they have tons more probiotics. If you don’t need to avoid dairy, you could use yogurt made from milk. My favorite is kefir made with raw goat milk; it’s super simple to make. These are the kefir grains I use.
You don’t have to serve this smoothie bowl in a coconut shell–I just went through the trouble for the photograph. In fact, I don’t recommend it. Working with coconuts is a hassle. If you choose to and haven’t cracked open coconuts before, there are tons of instructional Youtube videos.
