This is an easy recipe to make if you have a pound of ground beef and are looking for something quick to make with it for dinner.
When I make chili, it’s normally on a Sunday and I usually use a crockpot recipe that has more ingredients, such as beans, but my husband actually liked this one better. It seems richer and more flavorful.
If you want to make it heartier with extra carbs, you can add some precooked cubes of butternut squash in at the end.
You can double the recipe if you want to freeze extra for later.
Easy Paleo Chili
In a large pot, cook ground beef until browned (about 8-10 minutes
Remove ground beef from pot and put aside on a plate.
In same pot, melt coconut oil over medium heat add chopped onion and bell peppers and stir until soft (about 10 minutes). Add garlic and cook for about 1 minute.
Add meat back to the pot and stir in spices, chocolate powder, tomatoes, and salt and pepper and mix together. You may want to add some water at this point if it needs it. Bring to a boil and simmer for about 10 minutes. Adjust spices to your taste.
