Gingerbread Men

Ingredients

Instructions
  1. Preheat oven to 325F and line two cookie sheets with parchment paper.
  2. In a large bowl, add the almond flour, ginger, cinnamon cloves and salt until mix until combined.
  3. In a medium bowl, whisk the egg, maple syrup, molasses, coconut oil, and vanilla. Add to the flour mixture and mix until it forms a thick dough. Form into a ball and place in the freezer for 30 minute to harden before rolling.
  4. Place the dough between two sheets of wax paper and roll out the dough with a rolling pin until it’s about 1/4″ thick. Cut into shapes with cookie cutters and place on parchment-lined baking sheet (if dough gets too soft and breaks up, place it back in the freezer).
Frosting (optional):
  1. Beat together coconut oil, maple syrup, coconut flour, vanilla and salt until fluffy. Add to a piping bag and decorate your cookies.
Recipe Notes

If you’re not going to use the cookies right away, you might want to freeze them as they tend to get hard if left out.
