This delicious Pistachio Cranberry Peppermint Bark recipe is paleo, vegan, and dairy free. If you’re looking for an easy-to-make Christmas treat or gift that doesn’t involve baking, give it a try.

The main ingredients are cacao butter and coconut butter, so it has lots of healthy fats. Cacao butter is the main ingredient of chocolate. I used Bulletproof Cacao Butter, which “is designed to be the highest quality chocolate.” Coconut butter is extracted from coconut meat, like coconut oil, but it has a higher fiber content as it’s made from pulverizing whole, dried coconut meat into a thick spread.

If you don’t like peppermint, you could leave it out. Or if you want it to be lower carb, leave out the dried cranberries.

Pistachio and Vranberry Peppermint Bark Paleo Vegan Recipe
Instructions
  1. Line a baking sheet with parchment paper (mine was 9" x 13").
  2. In a pan over low heat, melt the coconut butter, cacao butter.
  3. Stir in the honey, peppermint extract, vanilla, and salt.
  4. Pour the mixture onto the parchment-lined sheet and spread evenly.
  5. Sprinkle the chopped pistachios and dried cranberries on top
  6. Place in refrigerator for at least 4 hours or overnight before breaking into pieces. Keep chilled.
