My husband loves scallops and when I cooked this super easy dish recently, he loved it and thought I’d been cooking for hours; he liked it better than when he’s had scallops at expensive restaurants.
It’s really quick and only has a few ingredients. So why pay big bucks for seafood at fancy restaurants when you can whip something up at home in about 10 minutes?
Scallops With Lemon Butter
Melt 1 tablespoon butter in a large skillet over medium high heat.
After washing and drying the scallops, add them to the skillet in a single layer (if they won't all fit, add in batches). Cook for 2-3 minutes per side (until golden brown and translucent). When cooked, remove scallops and set aside to keep warm.
To make the sauce, melt the remaining 2 tablespoons of butter in the skillet and add garlic. Stir garlic frequently for about 1 minute. Add lemon juice and season with paprika and salt and pepper to taste. Stir in scallops and sprinkle with chopped parsley.
